Store Garlic in Your Freezer

I really like growing garlic - I enjoy trying varieties not available in the grocery store and they are REALLY good! The mild Elephant or Artichoke garlic doesn’t keep as long as the smaller heads. So about this time of year (November), if I have any left, I chop it up and store it in the freezer - so it won’t go to waste.

Here’s what I do:

 

1. Break apart all of the garlic cloves, and make sure you have an ice cube tray handy.

 

2. Peel each of the cloves. I cut off the bottom end and lightly smash the clove with the flat side of a chef’s knife. The paper coat will release easier.

 

3. Finely dice the garlic.

 

4. Scoop the diced garlic into an ice cube tray, and lightly press in with your fingers. Poor olive oil over the top to fill.

 

5. Freeze the tray. Once frozen use a knife to edge out the cubes. Store them in a freezer bag for up to a year (if they last that long).

 

Now, you can use a garlic cube anytime a stovetop recipe asks for garlic. It already contains olive oil, so there is no need to add more.
